Corton is a name with weight. The only red Grand Cru of the Côte de Beaune, but above all a hill that has set its own law for centuries: generous exposures, drying winds, ancient quarries that carved poor, calcareous soils threaded with veins of marl. Here, Pinot Noir finds a solemn, almost architectural register, as if each row of vines remembered how, even in the Middle Ages, the monks of Saint-Andoche had identified this mountain as an "infallible" place. Maxime Dubuet Boillot tends twenty ares of forty-year-old vines on the south–southeast slope—a position that captures light with precision, never scorching the plant, yielding wines of firm stride and rare complexity. Harvesting is manual, as it should be. For this cuvée, he keeps 30% whole clusters: the most honest way to preserve the soul of the fruit and the breath of the hill. The pre-fermentation maceration at 10°C lasts only a few days, just long enough to organize the aromas before fermentation—strictly spontaneous and without added sulphites—begins its movement. Ageing takes place in French oak for twelve months, half of it new. It is not a choice of power but of chiseling: the wood supports without overshadowing, accompanies without imposing.
